This is typically one of the lazy and feel’in like having pancakes kind of weekends. Well, everyone deserve to have such occasional sweet treats, right?
I do have an easy recipe (with a special ingredient) to share, check it out:
This makes about 12 medium-sized (serving 2-3 persons), preparation and cooking about 30 mins
Ingredients
– Plain white flour 250g
– 2 tablespoon baking soda
– 2 tablespoon caster sugar (I am using organic coconut sugar)
– 1 teaspoon salt
– 2 tablespoon of melted butter (you can substitute it with olive oil too), some extra for cooking
– 1 large egg
– 500ml of milk
– 2 teaspoon of Moringa ground powder (*special/optional)
Moringa powder! This is the special ingredient I like to add to my pancakes. For those of you who are not familiar with Moringa, it is a plant originally found in Africa/South Asia. It a super health food and is known to be rich in anti-oxidants. It resembles the Japanese Matcha (given its greenish color), but with a much subtle taste. You can easily blend Moringa powder into your smoothies or yoghurts too! This would be my pancake hack – adding Moringa for a healthy boost!
Steps
– Sift the flour, baking soda, sugar, salt and Moringa powder into a large bowl
– With a kitchen machine, mix the ingredients. Then gradually whisk in the milk, egg and melted butter until you have a smooth batter
– Let the batter rest for 5 mins
– Heat up a non-stick frying pan and add a knob of butter
– Scope up a ladle of batter into the frying pan and let it cook until you see bubbles appear on the top of the pancake
– Turn the pancake over, cook until both sides are golden brown
– Continue with the batter until it is finished! In the meantime, start layering the cooked pancakes (this is the fun part don’t you agree?) and keep warm with a piece of aluminium foil
Serving
Maple syrup is a MUST to go with pancakes for me. We like to add fresh fruits too, especially blue berries or ananas, which blend in very well with the taste of maple syrup!
